A Week of Deliciousness

​One of the most common questions I receive in my DM's is how I prepare yummy and healthy food for a hectic week of work or classes. During the busy week, I don't want to have to think about food so I make sure I am prepared with lots of easy to grab goodies that will leave me energized to live my life and (hopefully) survive work. I was lucky enough to partner with Palmetto Gardens, a greens company found at your local Publix, to take you with me on my grocery trip to show you what ​I get to set myself up for a week of success!

My weekly shopping trip is usually pretty predictable: leafy greens, a ton of seasonal vegetables, maybe some nuts or legumes depending on what I have, and ingredients for whatever I decide to meal prep for lunch. Last week it was enchiladas, the week before that it was butternut stew, and this week it's lLasagna! I will post the full recipe for this plant based lasagna on my Instagram, FindingFullness, but I made a HUGE pan and froze some for another week too. ​

No matter what I meal prep, I ALWAYS heat it up on top of a bed of leafy greens- usually kale! This is for several reasons. One being, I genuinely LOVE eating greens, especially if it's massaged with a little lemon and olive oil. The juices and flavors from my meal prep seep into the greens and it's a great time, I swear. I also love the volume, texture, and crunch it adds to my meal! So many more bites of yumminess. Kale is also a great source of Vitamin K, C, and A as well as potassium, calcium, lutein, and fiber. I don't take a multivitamin so it's great to know I am getting a ton of nutrients from a tasty veggie!

I started my grocery trip in the produce aisle, as always. I picked up some Palmetto Gardens Kale and Turnip greens for this week! ​

I also grabbed some mushrooms, peppers, onions, broccoli, and apples. My dinner will often be quick and easy- usually a simple salad or tortilla loaded with whatever vegetables I have on hand, some beans or tofu, and lots of hummus! When I have more time and are a bit hungrier, I will cook some pasta or gnocchi instead. These vegetables I grabbed will be great to mix and match all week in a salad, wrap, or pasta! Next, I think about the obvious: SNACKS! At work, I have made it a routine to sit down with some hummus, peppers or carrots, and a Kombucha tea. It is the perfect pick me up to make it through to my lunch break, which I like to take later in my shift! I grabbed a big bottle of booch because it was on sale and much cheaper. I find it SUCH a game changer to have a fun mid-work routine to look forward to!

Something I prioritize each week is having a homemade baked treat. I love to end my lunch break with it, plus I love to bake! I picked up my favorite chocolate chips and some coconut sugar to make a banana bread or cookie recipe.

Breakfasts are also quick and easy- either a hummus and vegetable wrap, a piece of avocado or almond butter toast, or oatmeal! I grabbed a yummy looking loaf of sourdough bread, some nut butter, an avocado, and some apples to have different easy breakfasts throughout the week.

Last but not least, I stocked up on all of the ingredients needed for the lasagna I am meal prepping this week. I eat mostly plant based, so decided to make a vegan lasagna but the recipe can easily be modified to fit your needs! It is super delicious and SO easy. I will be posting the full recipe on my page. I had some of the ingredients needed but grabbed marinara sauce, vegan mozzarella, cashews to make a ricotta, lasagna noodles, and basil.

And that's it! By stocking up on the produce and odds and ends I need before a set of shifts, I can mix and match to make lots of yummy creations throughout the week.
